This week I shared recipes for sweet and savoury pancakes
Peanut Butter and Banana Pancakes
Basic Batter Recipe, enough for 8 pancakes:
Ingredients
1 large egg
½ pint/280ml milk
4oz/110g plain flour
1 tbsp melted butter optional
Dump everything in a blender and whiz until smooth. It should be no thicker than single cream.
Brush a hot pan with vegetable oil before adding a ladleful of batter and swilling thinly around the pan so the mixture spreads evenly.
When the underside of the pancake is browned, toss or turn it with a spatula.
For the topping
6 tbsp smooth peanut butter
2 tbsp icing sugar
2 tbsp milk
½ banana, sliced
Prepare a batch of pancakes and keep them warm
Mix the icing sugar, milk and peanut butter to make a paste.
Spread the paste over the pancakes and top with sliced banana.
Fold the pancakes and enjoy!
Goats Cheese and Red Pepper Pancakes
Batter mix as above plus:
200g courgette, grated and pressed to get rid of the water
1 bunch parsley, finely chopped
1 stem of mint, finely chopped
salt
For the filling:
1 large red pepper, diced
2 tablespoons oil
100g feta cheese, diced
1 stem of mint, chopped
salt and pepper (optional)
Make the batter as usual but this time add the grated courgette, parsley and mint and cook.
For the filling, heat the oil in a frying pan and saute the pepper for 3 minutes. Remove from the heat and mix with feta cheese and mint.
Spoon the filling onto the hot pancakes, fold and serve. YUM 🙂
